Moving beyond a standard hotel promotion, the festival is positioned as a flavour-led journey through Kerala’s culinary landscape from Malabar and Alappuzha to Munnar and Trivandrum. The menu spotlights regional ingredients, slow-cooked gravies, traditional spice blends and dishes that reflect the state’s deep connection with the sea, backwaters and spice trade.

Speaking about the festival, Pankaj Sah, Executive Sous Chef, Holiday Inn Bengaluru Racecourse, said,

“Kerala’s food has an unmistakable sense of place  from the fragrance of coconut and curry leaves to the boldness of coastal spices. With Kerala Kismet: Tales of the Backwaters, we wanted to bring that authenticity to the table through dishes that are rooted in tradition but presented for today’s diners. Each plate is designed to tell a story of the region, its homes, markets and backwater communities.”

Menu highlights include Malabar Mutton Soup, Trivandrum Koon Coconut Roast, Alappuzha Veg Curry and Alappuzha Chemmeen Thenga Kari. Guests can pair these with Munnar Pathiri Roti and end with Ela Ada, the classic steamed sweet filled with coconut and jaggery. Together, the selection offers diners a compact yet evocative taste of Kerala’s comfort food, festive specials and coastal favourites.

The festival also builds Glass Kitchen & contemporary coastal identity, giving Bengaluru diners a timely reason to revisit the restaurant for a focused regional experience. Set against the backdrop of a modern dining space, Kerala Kismet brings the nostalgia of home-style recipes together with the polish of a hotel-led culinary showcase.
